End of Season Green

I considered waiting to share this post until the fall, but then I thought why not now. This is the perfect idea to share now while you’re still deciding what you are putting into the ground or containers for this growing season.

If you have some tomatoes planted and wondering if you should plant more, the answer is a resounding yes!

I’ve mentioned before that last year, the growing season here in the Pacific Northwest was horrible. Nothing really took off until the end of June and the beginning of July. And I was concerned with my tomatoes. If fact, the above picture was the last of the tomatoes that I took off the vine at the beginning of October!

As you can see, there were so many green tomatoes that I still had, but my plants were dying off. So instead of all these beauties, I brought them inside and found a recipe that has now entered my MUST make every year when I bring the tomatoes in.

But I wanted to share this recipe with you now, because this is worth planting the extra tomato plants that you’re debating about adding to your garden.

If you’re like our families, you grow enough tomatoes to make your tomato sauce, pizza sauce, tomato soup, salsa or other tomato product you store for the winter. (This year I’m going to add making our out ketchup and tomato paste.) You definitely want to add Green Tomato Relish to your list!

I tried this last year not just because I had a plethora of green tomatoes, but also because my husband loves relish and I hate pickles. So I gave this a test drive to see if I could make something that is on his list of condiments and yet is something that I will eat as well. And I tell you that this hit the spot for everyone!

OurHalfAcreHomestead Green Tomato Relish

Mrs. Volfie posted her Green Tomato Relish here, but for your convenience I’m leaving the directions she walks through below. Please note, that if for your first time you don’t have the celery seed in your cupboard you are still going to have an amazing relish without it. I now have celery seed in my kitchen so I can’t wait to see how much better it turns out.

This is the vegetable ratio that Mrs. Volfie talks about in her recipe. You can mutiply it according to how many green tomatoes that you have.

  • 2 C Green Tomatoes, minced
  • 2 C Onions, minced
  • 1 C Sweet Peppers, minced

The Base for this recipe is 5 Cups of produce.

As you can see here, I used red onions instead of the yellow onions that Mrs. Volfie used. They are just my personal favorite onion, but please feel free to use the onions that you have on hand. I also want to mention that I was about a half cup short of the minced peppers and I still instantly fell in love with this recipe. Just remember that if you’re light in one vegetable, you should try to make up for it with one of the other vegetables.

I didn’t and I ended up with a slightly wetter finished product than I would have liked. But that is okay. Having run this recipe and knowing what the outcome is and what my personal expectations were, I know that this next batch that I make, I’ll make sure to keep that 5 Cups Base ratio and I’ll go a little lighter on the liquid, but I’m ahead of myself.

Let’s move forward.

This is a 2 day project. On first day, you’re going to mince your vegetables and let it sit over night. The next day you’re going to cook and bottle or jar your relish. And as a busy mom, I sure do love recipes that I can break up into steps like this and not have to take an entire day to run a canner.

Day One

  1. Mince your vegetables to make up your Base Unit. (In the video Mrs. Volfie made a triple batch, which is a total of 15 Cups of produce.) I didn’t have the chopping tool that Mrs. Volfie used, so I minced by hand.
  2. Combine your vegetables and add 2 Tbsp of Pickling Salt. If you are running less or more of a Base Batch, you may need to adjust the amount of salt used accordingly. (The purpose of the salt is to soften the vegetables but also reduce some of the water content.)
  3. Put the raw relish in your refrigerator overnight.

Day Two

  1. Strain and rinse off your relish.
  2. Put back into the pot and add the following. (This is for a triple batch, so please adjust these ingredients according to the Base Batch of recipe that you’re running.)
    • 2 C Sugar (Mrs. Volfie mentions that she prefers brown sugar. I just used cane so can’t comment on the difference in flavors.)
    • 2 C Organic Apple Cider Vinegar
    • 2 tsp. Salt
    • 1 tsp. Celery Seed
    • Fresh Cracked Black Pepper
  3. Bring to a boil on your stovetop.
  4. Fill hot jars or bottles with the relish with 1″ headspace and de-bubble.
  5. Hot Water Bath the relish for 15-20 minutes.

For Christmas, my husband and I gifted this relish to friends and loved ones. And everyone came back raving about it. Not only that, but have talked with their loved ones who are also interested in this relish.

You won’t hear this in the video, but I would be remiss if I didn’t tell you that this relish makes the BEST tartar sauce just by mixing in your favorite mayonnaise. Everyone I’ve told that to in person just gave me the humored head nod that said, “so you say. I might give it a try.” Everyone did try and they came back with fireworks in their eyes.

Living in the Pacific Northwest, we are spoiled with fresh seafood. So of course when anyone talks about tartar sauce, people get a little snobby. But please, please, please, give this a try. Because I have yet to have someone come back to me and tell me that it did not hit the spot.

And if you are planning a special event, are a caterer, and seafood is on the menu I am telling you that this one condiment is the way to wow your customers and come back with glowing revues!

Ketchup

The ingredients on this recipe from Self Sufficient Me sounds about right for what I look for in a ketchup. The written recipe is found here.

There is one glaring issue that I have with this recipe by watching the video is that it is too thin and liquid based for the type of ketchup my family likes. The culprit for this being so runny is that he runs his tomatoes through a food processor at the very beginning.

I was teaching a small class on how to make tomato sauce and we found out the hard way that when you process tomatoes like this you just can’t ever get that sauce to thicken up! The reason for this is because there is a chemical in the skin of tomatoes that when you release (by blitzing the tomatoes) it counteracts the pectin that is naturally in the tomatoes. You end up with tomato juice.

So to prevent the thinning of your tomato product, you really do not want to cut the tomato more than you have to. Small tomatoes cut in half. Large tomatoes cut into quarters. The pectin inside the tomatoes will thicken your sauce and minimize your time in front of a hot stove.

Tomato Paste

While I do have a few Italian Nona’s that I love watching on YouTube for inspiration, I want to try this Turkish recipe for making a tomato paste. With Turkish Food Travel, you can watch her video here or written recipe here.

A quick walking away point from this is that you notice that the pectin inside the tomatoes are at work in making this a thick sauce to start with. Then you keep the pan on the heat much longer than you would for a chunky tomato/pasta sauce. So if you’re making your own pasta sauce already, to make a paste you keep cooking the sauce down until you cook the vast majority of the liquid out.

I like how this recipe uses salt to reduce the tomato liquid even before you start cooking. This has inspired me to prep the tomatoes the night before I want to cook the paste, so the salt can maximize its extraction time.

At the end of the video you will hear about the method of making tomato paste by cooking it in the sun. Even though there was not enough description here, it sounds very similar to what I’ve heard is done in Italy. There are wooden tables that are used to make the paste. From what I understand, the sauce is first made and then spread across the wooden table. The sun dehydrates the tomatoes for you to make the paste. The only thing you do during this process is to use a scraper or a bench knife and mix the sauce/paste so that everything dehydrates/dries in the sun at an even rate.

Meaningful Gifts

Happy Mother’s Day to all the moms who are celebrating today with their children, the moms who are missing their children, the moms who have lost their babies far too early, those who shared an all too brief moment with their babies, the mothers who are in the middle of a season of making the dream of motherhood a reality, and those who love on the children from other mothers who lean on you to be the loving assurance in this season of their life. No matter what motherhood looks like to you, Happy Mother’s Day!

Depending on who you talk to, some people feel that holidays are too commercialized. Others find it difficult to find the perfect gift. And others find it difficult to gift a loved one while feeling the financial pressures of this season of world history. No matter where you personally find yourself on this spectrum, I want to help you find inspiration on how you can find a meaningful gift for someone. Whether it’s a belated mother’s day present, a birthday, anniversary, father’s day, grandparents’ day, teacher appreciation, graduation, or any other occasion, know that you can gift in a meaningful way.

I’m going to use the example of the mother’s day gift that I gave one of the mothers in my life. While this may not apply to the person in your life, the same principle can be applied in finding what you can gift that special person in your life.

This mom loves talking about her memories. For many years she’s shared her precious memories of when she operated a daycare. And one of those fond memories is when she grew gardens with the children under her care.

One thing about moms, it seems pretty universal that sharing memories usually isn’t about the memory. It’s about reliving a moment in life that brought pleasure to them.

From this understanding, I knew that building a garden for this mom was a gift that would fill her love tank. Not only is it an opportunity for her to relive precious memories in the here and now, it also opened the opportunity to add more memories in association with these older memories. By building a garden and scheduling time to upkeep and tend to the garden, it was also guaranteeing visits and making time for her to spend time together.

For this mom, she has two love languages. Her primary love language is gift giving. Her receiving love language is quality time.

Making a deposit of part of this season’s garden was not just a simple arrive, dig holes, put in start, say good bye, and move on with the day.

For this Mother’s Day gift, it took in the appearance of leaving all the gardening supplies in the car and starting off with a sit down chat and getting caught up with all the news, even if it was only a day since we last saw each other. Then, I was able to go prepare the garden beds for this first plant installment.

Even before I could bring out the plants, this mom was already so filled with love that she wanted to spend some more talking. As much as I wanted to stay task driven (my personality is to knuckle down and get a project done quickly so I can move on to the next task), this day was all about showing love to this mom.

So we had another chat session.

When I could find a polite moment to get back to the task of putting the starts back into the ground, I made that move. And with the final post plant watering, I went back and gave this mom one last extension to the gift I was giving her.

Remember, I said that this mom shows love to others by giving to them. So while I was building this garden for this mom, I know that the one thing that would bring her even more pleasure is by telling her upfront that the goal of this garden is primarily to meet her primary produce needs, I’m planting more than she will personally need so that she can give from the garden to others.

I wish I could share with you the look on her face, because she was bursting with love. Knowing that she was having a garden this year was more than enough to help her feel love, she felt seen and more loved because the gift was enabling her to show love to others without need to be reserved or anything else. It was a gift that was freely given so that she could freely give to others.

I know that this story may or may not show you specifically what you can give the hard to shop for person, but there is a valuable lesson here.

A good gift is designed to make a person feel loved because it speaks to how they most readily feel loved.

If you don’t know this love language, ask your person how they most feel loved. They will gladly tell you. It could be a tangible object or food that makes them feel loved. Or it can be a non-tangible activity, expression, or display.

A great gift is one that fills their love tank, but also doubles as a tool to enable them to share their love with others.

Maybe your loved one is not like this mother. Maybe they don’t show love to others by giving them things. Maybe they show love through acts of service. However their schedule is busy. By gifting them your time to do tasks for them or help them create time, this can free up time where they can show love to others by spending time with another person.

My encouragement to you today is to be inspired with a gift idea that doesn’t come from the shelf of a store. Yes, there are many store bought items that are amazing and meaningful. I want to strike the inspirational fire to give a gift out of love and seeing the other person at a core level. And also enable them to pass on love to others.

Right now we live in an interesting moment in history. It is an uncertain time for many families. But it is also a prime moment to celebrate others by giving to them in a way that shows them that you remember past conversations. Where you have heard and remembered things that could have easily been passed off as trivial information in the moment.

Let’s show our loved ones that we see them. And we celebrate them for who they are.

Saving Seeds

I know this isn’t talked about in early spring, because the focus is putting seeds in the focus is on planning and putting into ground right now. BUT….

Here’s my garden right now. Even before the seeds go in the ground, I still have seeds that are preparing to be ready to harvest.

Talking with others who are expanding their seed saving skills, they haven’t yet experienced saving seeds from the Brassica family (cabbage, kale, cauliflower, broccoli and others). One reason for this is most likely because we grew up being told to clear out garden beds at the end of the year. But for gathering these seeds, you need to leave the plant in the ground after you’ve harvested.

In previous years, I harvested cabbage in the spring after the pods have formed and dried. But when I let this bed go fallow, I left the cabbage in for a second year. Mainly it was to see what the life cycle of cabbage looks like after I’ve long pulled mine.

In the second year with cabbage, any additional heads that grow are much smaller than the original year (for growing purposely, definitely not the best use of garden space). What I hadn’t counted on was a second gathering of seeds.

Why might you consider these seeds?

The general rule of thumb is that you save the seeds from successful plants–the biggest and best. But as I said, this second year cabbage didn’t really produce heads of quality in the second year.

Seeds are the memory of the plant.

The seeds of this second year cabbage not only contain the memory of the first year head growth AND it remembers the bad growing season this past year (unseasonably cold and wet that made me question if I’d grow anything).

Originally I wasn’t going to save these second year seeds because the potential passing on of tiny cabbage heads is not what I’m looking for. However the seeds do contain the memory of surviving through an uncharacteristic cold year.

So after going back and forth on what I’m going to do, I’ve decided to keep these seeds. I’m going to perform a comparison of first and second year seeds to see what the difference in performance will be.

This will be a future post since the seeds are not ready to do the comparison this year.

What is the life cycle of Brassica and their seeds?

Whether you’ve allowed your Brassica family plants go to seed or they just bolted on you when the heat of summer came, you may have seen something like this:

This was one of my rapini that bolted on me. The first thing that you see is the bolt.

Next, the flowers (which form the seed pods) grow for pollination. While there are still flowers you will see some of the seed pods developing.

Out of all the plants that I’ve collected seeds from, I think the Brassica family is the one that I’m most impatient with. I don’t know if it’s just my grow zone or everyone starts tapping their toe asking their plant, “Are you done yet?”

These pods remind me so much of beans. And I honestly expected them to bulge out more than you see above. But this is what the end of the seed maturing stage looks like, immature beans. Even though these pods are fully grown, they still aren’t done yet. They will turn beige.

Everyone I’ve heard always described them to turn brown. I translated that to mean that they would darken. But the first time that I saved these seeds, they started bursting open when they were beige in color. So once you start seeing the green fade from these pods, you know it’s almost time to pull the plant and collect the seeds.

What you are waiting for is the pod to turn papery dry. If you go out each day to check on your seed pods, you will get the feel for it when you see the first one pop open. The pod will look very much like this threaded hook:

Do you see how the center of this hook has a frame and then there is negative space?

Theseed pods of Brassica have the exact same structure. There is this frame like structure with negative space in the middle.

When the pod bursts, it’s the dry skin that cracks open and falls away. The seeds live in this center portion of the frame. So when the pods open, the seeds fall out and the frame remains on the Brassica stem.

The goal is to catch your Brassica with fully mature branches, dry beige skin, before they release their seeds. Once you accomplish this, you cut the branches off or uproot the whole plant.

If you can’t open a pod by rubbing it between your fingers, you will want to hang your branches/plant upside down in a cool dry place. This can take a week or two. But the pods will crumble.

Removing the Seeds from the Pod

Once the seeds opened in my hand, I chose to put the branches into a pillow case and tie off the open end. Then I gave the pillow case to my kiddos and told them to hit the pillow case against the deck!

This was perfect timing for this project because my kiddos were at each other and I couldn’t keep them from hitting each other. So I gave them an alternate action of being aggressive. After each one had a turn, the pods had all broken open and the seeds were all released inside the pillow case.

To separate out the seed from the chaff (stems and pods), I just used the traditional method of winnowing. I modified this by using a little modern convenience of a box fan on high speed. Because the chaff was so thoroughly dried out, they blew away with ease. And even though the seeds are small, they really do drop back down into the pillow case that I kept at the porch in front of my box fan.

If you want to see how this type of winnowing process is done, there are countless videos on YouTube. There are some that do this winnowing with Brassica seeds, but the majority is in relation to wheat and other grains. The process is the same. So whether you watch how grains or Brassica are winnowed, you will understand this process. There’s no need to invest in a winnowing box or other tool unless that is the path you want to go down. All you need is your seeds on a cloth and a wind source (whether natural or manufactured).

There’s no further step that you need to take in processing your seeds. Just store


Even though now is the time to plan and plant in your garden beds, I wanted to talk about saving Brassica seeds now. Where you plant your Brassica now for a spring crop, it will stay there for the rest of the growing season. And in some locations, it will need to overwinter to give your plant enough time to make its seeds and mature them.

This is a slow process. But it so worth it when you can grow hundreds upon hundreds of seeds in a single season and not be dependent on what’s available in future market sales.

More Than Arm Candy

I have to love my husband who loves to give practical gifts. Usually he stays away from gifting flowers because they last for a few days before they’re composted. However, there are so many uses for not just roses but other flowers as well. While I’m going to be talking about roses here, there are so many other flowers that can be used in the exact same way!

For those who are unaware, roses are edible. (Before you do eat rose petals, make sure that they haven’t been sprayed with chemicals, pesticides, insecticides, or anything else that is harmful to you.) Roses contain vitamins A & C, Niacin, Potassium, Iron, Calcium, and Phosphorus. Some places where you’ll find fresh petals are on a dessert/cake or in beverages such as teas.

It’s not just the petals that are usable to our bodies. Rose hips (the bulb at the bottom of bud, harvested at the end of the rose season from the rose bush) is used in the beauty industry and baby products for the benefits it has to the skin.

The benefits to the skin is the primary reason why I decided from this last bouquet of roses that was given to me that I was going to use the petals for my next batch of soap.

I started making soap because I’m not okay with all the chemicals that are being used in soaps in the commercial market. Other than using soap dyes (which I’ve had my tub and skin discolored from bath bombs and other products) the mission I’m on is finding natural dyes to color my soap. For pink soap, I’ve seen soap makers use dyes or French clay.

Now Calendula is a well known floral natural food grade colorant. For red/pink colorant, Beets can be used in food. But anyone who’s worked with beets knows that your skin and clothes can be discolored. So I wanted to find a different red/pink colorant for my soap that I can grow in my garden. So I came to roses.

How to Process Roses

There’s two easy ways of doing this.

The first is to hang the roses upside down to slowly dry them out. The benefit of this method is that all the vitamins and natural compounds that our bodies benefit from are at a higher concentration when they are dried at a low temperature and slowly.

Ideally, the most benefit would come from using the petals fresh. And while it is possible to use fresh ingredients in soap making (I make orange colored soap using pumpkin puree), there’s no way of breaking down the petals for a smooth and consistent colorant unless you want to use a blender and puree it with the water content of your soap. While it’s not a bad idea, unless you grow roses year round (which I don’t) you have a limited supply due to the window of fresh flowers available. (This is the reason why dried petals are best for me.)

This drying method is slow and takes time. Also any white component will yellow as it dries out. This can affect your over all final color depending on which rose you use. With the red rose, not so much. But the other two, the tinge will be noticible.

So there’s the second method, using a dehydrator.

The benefit from using a dehydrator is that petals are finished drying in about 24 hours (at 90°F, the lowest setting on my dehydrator) and their colors are only affected by growing darker.

As you can see here, the white component on the pink flowers have not discolored too much. This is great because when I turn these petals to powders, I’ll retain a pink like quality.

Before I move on to finishing these petals, I want to mention that if you want to make a natural confetti for cake decorations or throwing for a party/wedding celebration, all that you need to do is crush your dried petals by hand and store them in an air tight container (like a lidded glass jar) to prevent them from rehydrating due to humidity in the air.

As you can guess, with the fact that there were lavender inner petals on the second rose (the one with the variegated pink and white outer flowers), this is the reason why I blended in the red petals with the pink ones, to keep the pink and stop the transitiontoward purple (although I’m not opposed to purple soap.)

To make Rose Powder, all you need to do is put the crushed petals into a coffee or herb grinder and run it until you get the consistency that you are looking for. Because I’m looking to make a colorant for my soap and don’t want to have flower chunks in it, I took the powder down to a very fine grind.

The fun part about Rose Powder is that you’re not limited to use it as a natural dye or colorant. You could dust this on the icing of a confectionary dessert. If you want to make pink pasta, use this powder as part of your dry ingredients. Mix the powder with a sugar or salt and you have a pink sugar or salt rim to your favorite beverage.

No matter what celebration you have coming up, keep this idea in mind. If you want to dress put your Easter cup you can make a sugar rim using all sorts of different colored edible flowers. Calendula gives you yellow/orange, Violets blue/purple, Hibiscus yellow/orange/pink/blue/purple, there are so many other flowers. Bless This Garden

This year I’m working in concert with others in a garden. (I am so excited for this!) If you’re as busy as I am, you can imagine how quickly things slip through the cracks.

After hitting my local dollar store, I found some pieces that are going to make an inexpensive tool that doubles as home decor, all the while keeping tabs on what’s been done.

With these I decided to make a magnetic board where anyone tending the garden can quickly mark what they did.

I know the galvanized finish tends to overtake everything. So with the galvanized frame and banner, everything gets lost real quick. Not to mention that the frame was a really bad fake wood. To dress all this up a bit and minimize the galvanized look, I painted the frame and banner black.

I forgot to take a picture of the banner painted in flat black chalk paint (the same paint as the frame). It looked too minimalistic for my taste, so I took the transfer tape (which I used to apply the vinyl text) and put it straight onto the paint. Some places lifted the paint quite easily. But to get the distressed look, I scratched the tape

The magnets needed a little something extra. There are so many things that could be done. I have children and they’re helping with this garden and they’ll also be marking what we do when we work, so I went into kid zone and painted the magnets with acrylic paint and did all the colors.

If you want to keep minimalistic, pick your favorite color.

Love things that sparkle, glue on gem stones or use glitter.

What about texture? Glue on fuzzy pom poms, baby pine cones, large seeds or nuts… literally whatever catches your imagination. Maybe you have a farm and want to use small farm yard figures and animals. (I wish I had these in my craft room!!!)

Something that is great about using the galvanized banner is that the extra magnets can be kept on the banner so you can add stickers, personalization, more tasks, or a note section in the blank space on the bottom.

And then while typing I decided to go a different direction.

I pulled these out! Last year I made carrots out of my corn cobs. And I brought out the wooden beads from my drawer (which I also got from my local dollar store).

With the beads I removed them all from the string they came on and noted how they tied off the end bead to keep them all on the string. This “knot” that they used was how I spaced the beads further apart on the string.

Once I made those changes, the colorful “polka dots” needed to change. The gold and green glitter styrofoam balls simplified the overwhelming colors.

Even with the new modifications hanging, I’m not satisfied with the final color scheme. And sometimes that happens when you’re creating. You start building from the image you see in your head and make a change here or there and an earlier idea you loved just doesn’t work anymore.

The black isn’t working anymore. I loved the idea to begin with because it was a nice basic color that goes with where I was going to hang this. But it’s just not working anymore.

First thing first, I need to lighten up the banner. So I’ll be distressing it heavily so that the majority of the galvanized metal will show through. With the addition of the carrots, which obviously take the spotlight, I can bring out a lot more of that metal and the metal is not going to overtake and make everything else hide.

But before I do that, I need to decide what I’m going to do with the frame and that’s going to take a few days of looking at it to see where I want to go. At the moment, I’m leaning toward the idea of painting on white striped and creating a plaid hand painted design on it. If I go that route, I might keep the banner predominately black still and incorporate that same design element into parts of the banner.

And I’m going to leave you here in this moment just because sometimes the right thing is to take a step away from a project and let it tumble around in your brain. You don’t always have to have the answer right away. And you don’t always have to have things done in an hour.

Perhaps it’s convenient to have an idea presented to you in a finished state.
